Well, today has been a bad day.  I had to take my son to get some results for his testing (he is OK) but I had no time this morning.  I stopped and got something to eat. 

I am hoping to get to the store tomorrow after the kids go with their dad and get some good food that I can eat on the run. 

I am making a list of what I need for the next week.  Well, I guess I should go and check out Sparkpeople.com.  I have decided that I just don’t have the extra money to be a paid member of Calorie King.  I love their book, and have been using it to keep track.  I just can’t see paying a monthly fee for the same basic tools that I can get from SparkPeople.com for free.  So… I have joined over there.  You can find me at AmyJoOnline (my sparkpeople username).

1 c. soy sauce

1/3 c. sugar

4 tsp. vegetable oil

1 1/2 tsp. ground ginger

1 tsp. five spice powder

2 bunches green onion

16 chicken tenders (approx. 2 lbs.)

Blend soy sauce, sugar, oil, ginger and five spice powder in a large bowl until the sugar

dissolves. Stir in green onions. Add chicken tenders to marinade. Turn to coat. Cover

chicken and refrigerate overnight. Preheat oven to 350 degrees.

Drain chicken RESERVING MARINADE. Arrange chicken in dish and bake until brown

and tender, while basting occasionally with marinade.

Another variation of the same recipe:

4 halves, skinned & boned chicken breasts

2 c. half & half

1 1/2 c. mayonnaise

3 tbsp. mango chutney

2 tbsp. dry sherry

1 tbsp. sherry vinegar

2 tbsp. plus 1 tsp. curry powder

1 tsp. turmeric

2 c. finely chopped salted roasted peanuts

Preheat oven to 350 degrees. Place chicken breasts in a shallow baking dish just large

enough to hold them. Pour half and half over them and bake for 30 minutes. Let cool

and cut in 1 inch cubes.

Process mayonnaise, chutney, sherry, vinegar, curry powder and turmeric in a blender

or food processor. Dip chicken pieces into the curry mayonnaise and roll in the

chopped nuts. Refrigerate 30 minutes. Arrange on a serving plate with fancy

toothpicks.

Well, as usual, today was a bit of a struggle.  I haven’t been sleeping well at night so when I do get to sleep, if I want to get 8 hours of sleep, I have to sleep until noon or 1 pm.  That just stinks.  Then I had to get both of my boys to the dentist and then come home and mow grass and then get some dinner and get them to bed.  Soooooo, in between this schedule, I did stop and get something from McDonalds.  BAD ME!!!

Now, I am getting ready to write down what I have had today in my food journal and get my calories added up.  I haven’t had much else other than that bad food, but I am starting to get hungry now and I am going to make one of the Lean Cuisine meals.  I really don’t want to eat this late but I am hungry, so I will have to.  :-)

Well, I just put my day’s food into Calorie King and I didn’t even eat the 2,000 that I am allowed to have.  YAY!  I did it today!  That is something for me.  I know it’s only today and it’s only the start but I have to say that I am very glad to have made it thru one whole day and UNDER my calorie intake. 

Now, lets see what happens tomorrow.  I am going to the grocery store tomorrow and get some groceries.  I am making my list now.
